Easy Bresaola and Arugula Salad

Easy Bresaola and Arugula Salad - a lunch-time favorite and worthy of guests. So delicious, easy and something new to try.

This can hardly be called a recipe, it’s so simple. This salad is as delicious as it is easy to make.

Ingredients

For the dressing:

  • 4 T Lemon
  • 8 T Extra virgin olive oil
  • Salt – to taste
  • Pepper – to taste

For the salad:

  • 6 C arugula
  • 1/4 lb sliced bresaola
  • Parmesan cheese for shaving

Instructions

  1. Start by making the dressing. In a mason jar combine the lemon, extra virgin olive oil, salt and pepper.
  2. Cover the jar and give it a good shake until the ingredients are well combined.
  3. Now make the salad. In a wide salad bowl add the arugula.
  4. Add two-thirds of the dressing and toss.
  5. Top the salad with bresaola so that the perimeter of your salad includes bresaola all around.
  6. Then shave the Parmesan cheese on top.
